I am the queen of using up ingredients before they expire.
I had some bananas getting really ripe, so I decided to make banana bread!
It’s a great way to use up all your bananas and have a (not so) sweet treat.
Time: 1 hour and 15 minutes
Ingredients
- 1 1/2 cups of flour
- 1/2 cup of granulated white sugar (can use more or add honey)
- 2 medium to large eggs
- 3/4 cup of room temperature butter
- 1 tsp baking powder
- 1 tsp nutmeg
- 1/2 tsp salt
- 1-2 vanilla beans (alternatively, you can use 1 tsp vanilla extract)
- 3 ripe bananas (roughly mashed)
- Optional: Toasted walnuts
Instructions
- Pre-heat oven to 350 Fahrenheit or 177 celcius.
- Grease your baking pan with butter and dust with flour. Set aside.
- Roughly smash the banana with a fork so that it is chunky. Set aside.
- In a separate bowl, whisk together the butter, vanilla bean, and 2 eggs.
- Add the sugar, baking soda, nutmeg, and salt. Mix with a whisk.
- Slowly add in the flour. Mix with a whisk until it thickens into a batter.
- Finally, fold in the bananas and transfer to a baking pan.
- OPTIONAL: Add toasted walnuts for crunch.
- Bake for 55 minutes or until you stick a fork through the bread and unbaked batter comes out.
- Remove from oven and let cool for 15 minutes before serving.
